Its mid-week, you’ve had a bad day, arriving home, tired and hungry. All you really want at this moment is to drop in your favourite chair and relax, with cold drink in hand. The family just stares at you walking through the door; all of them clutching forks and knives salivating with anticipation that you will perform amazing magic and instantly place a wholesome fabulous nutritious meal before their very eyes on the dinner table in less than twenty minutes. Not too sure what to make with all those amazing veggies looking back at you when you open the fridge? Take them all and make a Stir-fry!
This dish works well with wild salmon steaks, minute steaks, or pan-seared chicken. Choose meat that is easy to prepare without too much of your involvement.
I chose Pacific wild salmon steaks that were frozen in the freezer just waiting for such a night. I pulled out two pans, cut up all the veggies and put the salmon in one pan on medium high heat. While the salmon was steaming and pan-frying away with the lid on, I made the other dish. The timing for this dinner was great as they both were completed simultaneously and went together onto the table and dinner was done!
Use any veggies you have on hand. Remember to cook the denser veggies first and add the more delicate ones at the end of the cooking time. Your dinner guests (those who are standing around with utensils at the ready) will marvel at the flavours and the presentation is beautiful as well.
A TO Z VEGGIES
I chose this name for this recipe because I put just about any veggie I can find in it. This one in particular has everything from “A”Asparagus to “Z” Zucchini!
- Extra Virgin Olive Oil
- Garlic, crushed, or Garlic Scapes cut into 1 inch pieces
- Asparagus, cut into 1 inch pieces
- Zucchini, cut in rounds
- Red Pepper, cut into strips and halved
- Broccoli, flowers cut into segments and stems cut into rounds
- Green Onion, cut into 1 inch pieces using the bulb and the green part too
- Fresh Basil chopped roughly
- Sesame Oil
Couldn’t have been simpler! Dinner done, and looking like a magical masterpiece! You feel great for how fast it was to prepare. You look great by doing it, and still have time for that relax time and fancy drink!
I have been asked to write in my blog about different foods. The challenge is that each food has to start with a different letter of the alphabet. Eating your way through the alphabet. Each food featured has to have a recipe attached as well. I find this idea appealing and ask that you might have fun in doing this as well. Help Alison get through the alphabet. Welcome aboard, Lady Lovacore! Wow – I was kinda surprised to see you started the A-Z at F, but I did say there were no rules! Stir-fry is an easy dish and for many years I ate lots of stir-fry and rice. As a vegetarian I don’t need meat. 🙂
By the way, I lived for many years just down the road from your Alymer-based vegie grower, as I grew up in Canada and have dual citizenship, Canadian and British! 🙂

Your Blog is fun! I hope my readers contribute to your blog and send you their ideas and recipes as well. If I go through the recipes I have up so far, there are only a few letters left, but I will try my best to help you along the alphabet. But what veggie starts with F, N, U or even X… this is truly a challenge. Once again Im wishing we were using the Greek Alphabet, LOL
