I have discovered the best oatmeal recipe ever, and so easy to put together. It is extremely healthy as well. I use our Pioneer Mills organic Oatmeal from the farm. This dish balances both carbs, fat and protein, and has that “stick to your ribs” quality that will keep your tummy satisfied till the next meal. Enjoy it hot with a bit of milk, or cold cut into squares. Fresh raspberries and blueberries can be tossed on top for some added colour and antioxidants. It is like eating a huge oatmeal cookie, so it can be eaten as a brunch or the perfect midnight snack when you don’t need to be tempted by junk food.
AMISH BAKED OATMEAL
- 3 cups old-fashioned rolled oats, (oatmeal)
- 3/4 cup brown sugar
- 1/2 cup butter or extra light olive oil
- 2 eggs
- 2 cups rice milk, or milk
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 handful raisins
- 1 handful walnuts
Mix everything in a bowl. Pour into a buttered pan 10×13 and bake at 375 degrees for 30 minutes. This can be served immediately, scooped into small serving bowls. Serve with fresh milk on the side.
This recipe can be prepared and sit overnight before baking which makes a great time saver recipe.
I used half the sugar and it stil tasted nice. My children don’t like raisins so I used cranberries. It reheats very well and is delicious with greek yoghurt on top as a snack. Next time I might add coconut.
