Comfort food season is quickly approaching. Set aside some time this or next weekend and prepare a fresh batch of these excellent biscuits. This recipe is best when made with Franz’s organic stone milled flour. Nothing tastes more like wholesome homemade than this.
- 2 1/2 cups spelt flour or 2 cups wheat flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1/3 cup butter
- 1 Tbsp finely chopped fresh sage
- 3/4 cup grated apple
- 3/4 cup plain organic yogurt
- 2 Tbsp rice milk or milk of your choice
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine flour, baking powder, baking soda and salt. Add butter and work into the flour mixture with your fingers until the dough has the consistency of a coarse meal. Stir in sage. Make a well in the centre of the dry ingredients.
Place apple, yogurt and milk in a small bowl and stir to combine. Pour the yogurt mixture into the well and combine lightly until the dough forms a ball. Divide the dough into 3 pieces. Turn onto a lightly floured surface and knead each piece gently. Pat the dough into 3 rounds, each 1 inch thick. Using a harp knife, score the top of each round into quarters, place on the baking sheet and bake in the top third of the oven for 15 to 20 minutes until lightly golden. Transfer to a cooling rack.
Great with a hearty Tomato Soup or stew, or with a nice piece of cheese and a cup of tea for lunch.
