BBQ Chicken Pizza – Locavore Learners

This is a great recipe for having friends over for an evening of fun. Everyone loves pizza, but this pizza gives a twist on an old classic, and the flavours together are awesome.   Preparation time can be more involved, but if made ahead of time you can just pop it in the oven when your guests arrive! I was able to find pre-grated organic cheese at the grocery store, which eliminated the most time-consuming (in my opinion) part of the pizza making process.  Myself, I bought organic whole-wheat pizza dough from a bakery shop along my street, but Locavore Lady can post on how to make your own pizza dough – she’s talented that way.

Here’s what I used for my pizza:

BBQ Chicken Pizza

  • Organic wheat-pizza dough (purchased at the store)
  • Two chicken breasts, pre cooked and cut into bite sized pieces
  • BBQ sauce
  • Medium red onion, chopped
  • Cilantro, chopped- as much or as little as you like
  • Cheese, preferably cheddar or mozzarella or both

Pre heat the oven to 425 degrees. Start off by rolling out your pizza dough. I found this to be the trickiest part- not having a rolling-pin or anything. Picking it up to let gravity help stretch your pizza dough helped, but make sure you rotate it quickly to avoid getting any holes! Once your dough is spread out to your liking, the toughest part is over.

Then, just stack your pizza in the following order: BBQ Sauce, onions and cilantro, chicken and then finally cheese. Bake in the oven for 7-10 minutes, or until your desired crispy crust is achieved.  I was able to get 7-8 pieces from this pizza, none which lasted very long!! Enjoy.
