Grilled Summer Squash, Zucchini and Onions
- Yellow Summer Squash
- Green Zucchini Squash
- Onion
- Olive Oil
- Oregano, fresh or dried
- Rosemary, fresh
- 1/2 Lemon
Chop veggies in large bite sized chunks and toss in a bowl with olive oil. Do not peel the veggies. Use a Barbecue Basket on the grill or a tray that will not allow veggies to drop through the grate. Cook over medium-high heat. Alternatively, you could put the veggies on skewers. Toss veggies every two minutes or so, and watch for them to brown on the edges a bit. Cook to just tender but still crisp. Toss in the oregano and rosemary and mix to coat. Squeeze the lemon juice over the grilled vegetables and serve. Amazing with any entree. Grilled Fish, Chicken, Steak, Lamb, Portobello Mushrooms, you name it. Enjoy!
