Washing Greens to store:
Fill the sink with fresh cold water and submerge the greens. Add about 2 tablespoons of salt and swish around for a bit. I like to let them soak for about 5 or 10 minutes, then rinse and spin. I bought myself a new salad spinner which is essential during those months when greens are in abundance I especially enjoy the Oxo brand of salad spinners, as they are sturdy. I like to put the greens in a plastic container lined with paper towel and a fitted lid or wrapped in a damp linen cloth and then in plastic bags with ties. The bags go nicely in the crisper drawer of the refrigerator. This helps to crisp up the leaves, making them all nice and ready for a handful to go into a soup or for a salad at a moments notice.
